Anita's Healthy Meatballs

Hi thanks for your website, it has helped me to spend less time im my kitchen. I really don't enjoy cooking, but making meals ahead of time it's actually not that bad. Being a working mom with 2 kids my life is quite hectic. So I've concocted this recipe. It's adapted from an old traditional South African meatballs recipe..I just swopped some of the ingredients with healthier options. Hence, I'm sharing this recipe, please send me your comments.

Anita’s Healthy Wholegrain Meatballs:

1 kg Lean Beef Mince
3 Eggs – beaten
8-10 Wholegrain Crushed Provitas
1 cup finely chopped fresh Spinach
1 finely chopped onion
1 small red pepper finely chopped
1 carrot finely grated
Herbs & Spices to taste
Garlic – you can add if you like

In a bowl mix all Ingredients very well, form into round balls and place in a oven dish coated / sprayed with Spray & Cook. No oil is needed! Cover with Tin-foil and bake in oven, turn once. Don’t overcook the Meatballs otherwise they will dry out.

Once the Meatballs start to brown remove from oven and make your own sauce of choice and pour over meatballs… enjoy!

You can also freeze the Meatballs with a sauce of your choice or without, make sure you use an airtight container.

Provitas? and Herbs and Spices?
by: Anonymous

For new cooks, what are some "Herbs and Spices to taste".

Also, what is "Provitas" and is there anything more common that can be substituted?

Thanks for the recipe,

Marie
