Can I Freeze Raw Cornbread?




Can I freeze raw cornbread or do I have to bake it first?

Answer: I would bake it first. With cornbread you are depending on the baking powder to provide the lift for the dough since there is no yeast. Baking soda can lose it's potency from either moisture or heat.

If you do decide to freeze it first I would bake it from frozen and not thaw it. Cornbread muffins might also work better than a whole pan of cornbread.

Another tip is to look for ‘double-action’ baking powder. This baking powder reacts twice, once when it gets wet and once when it gets hot.
