Coconut French Toast
Coconut Topping:
Preheat a large frying pan or griddle.
Break the eggs into a shallow bowl and add the coconut milk then whisk together.
Grease the pan or griddle.
Dip the bread into the egg batter coating both sides and then fry until golden brown on both sides.
Do not serve with maple or fruit syrup, they overpower the coconut flavor.
I top mine by spreading with butter and sprinkling with equal parts powdered sugar and coconut mixed together.
Top it right before serving.
How to Freeze French Toast
To freeze Coconut French Toast don't add the topping because the powdered sugar starts to melt when it hits the hot toast.
The topping can be made ahead and stored in the pantry.
