Coconut French Toast Recipe
This coconut French toast recipe has a subtle flavor and is perfect for jazzing up a simple breakfast dish. Make it ahead for Mother's Day, Valentine's Day, Christmas or any brunch get together with friends and family.
This recipe is best with bread that's a bit neutral in flavor so the coconut can shine through, no 12 grain breads, rye or pumpernickel here. Also avoid the standard maple syrup as it's overpowering and top the toast with more coconut.
Coconut French Toast
12 slices bread
8 eggs
¼ cup coconut milk (or regular milk)
Cooking oil spray or butter
Coconut Topping:
1/4 cup powdered sugar
1/4 cup grated coconut
Preheat a large frying pan or griddle.
Break the eggs into a shallow bowl and add the coconut milk then whisk together.
Grease the pan or griddle. Dip the bread into the egg batter coating both sides and then fry until golden brown on both sides.
Do not serve with maple or fruit syrup, they overpower the coconut flavor. I top mine by spreading with butter and sprinkling with equal parts powdered sugar and coconut mixed together. Top it right before serving.
How to Freeze French Toast To freeze Coconut French Toast don't add the topping because the powdered sugar starts to melt when it hits the hot toast.
The topping can be made ahead and stored in the pantry.
