Easy Homemade Brownies Recipe


When looking for an easy homemade brownies recipe I make sure it calls for cocoa powder because I just don't make enough chocolate desserts to keep bakers chocolate on hand.

The simple truth is I love cookies more than brownies, but my husbands favorite dessert is fudgy brownies.

And being a cookie lover I prefer much thicker, cakier brownies. After quite a bit of experimenting we've come to a middle ground A recipe that could swing it either way.

I tend to overbake them so they aren't as fudgy when he's not paying attention. He gets the middles and I get the outsides but somehow we still end up fighting over the corners.

Like all good brownies these get the characteristic crackle and shiny top with a fudgy center. With this easy homemade brownies recipe you'll never buy the boxes of brownie mix again.

Easy Homemade Brownies Recipe

  • 1/2 cup butter, melted
  • 1 cups sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1/3 cup cocoa powder
  • 1/2 cup flour
  • 1/4 tsp salt
  • 1/2 tsp baking powder

Preheat the oven to 350 F then grease and flour the sides of a 9 inch square pan, cut a piece of parchment paper to cover the bottom of the pan and leave it there if you want to lift them out easily.

Melt the butter and mix in the sugar. Break the eggs in a large bowl and add some of the butter sugar mixture to temper the eggs. Once that is mixed together add the rest of the butter sugar mixture to the large bowl.

Pour in the vanilla extract then add the cocoa, flour, salt and baking powder. Stir to combine and pour into the pan.

Bake for 25-30 minutes until the top is shiny and a toothpick in the middle comes out clean. If you ask my husband it takes about 25 minutes. If you ask me it takes much longer, at least 30 minutes or until the smell drives him crazy and he takes them out before I can stop him.

What Other Variations Can I Try
This easy homemade brownies recipe is really versatile. Consider adding in marshmallows, chocolate chips or nuts. If you're really a wild child add all three.

Frost your brownies if you don't think there is enough sugar in the recipe already. Or dust them with powdered sugar before serving.

Freezing Homemade Brownies
I don't see much reason to freeze and thaw the batter as it would take longer than whipping up a fresh batch.

You're welcome to try freezing the batter in the pan and baking it from frozen if you want. Add about 50% to the baking time so you're looking at 37-45 minutes. Again it's longer than it would take to make a batch from scratch and you'll probably find the edges overbaked while the center is still quite fudgy.

Freezing Baked Brownies
To freeze brownies that are already baked first let them cool completely. If they will be in the freezer more than three months do not pre-cut them. Cutting them adds to the surface area and increases the chances that they will dry out or become freezer burnt. Nobody likes stale brownies.

Cut if desired and wrap the brownies in plastic food wrap and then place in tin foil or a freezer quality plastic bag. If you'll be freezing them for a long time, more than three months, use three layers such as the plastic wrap, tin foil and a freezer bag or plastic wrap and two freezer bags.

If you decide to frost your brownies chill them so the frosting is hard before wrapping for the freezer.

Remember to label and date the bag and add it to your freezer inventory sheet.

Thawing Brownies
Thaw your brownies in the fridge or on the counter. You can warm them in the microwave or oven if you want.
