Freezing sweet potatoes

by Ruby Dykstra
(Jacksonville Texas)

Can you put sweet potates in the freezer.Do they have to be cooked or can they be raw?

Hi Ruby,
Yes you can freeze sweet potatoes and yams. They should be blanched, particially cooked, or fully cooked before freezing. How long depends on the size of the piece.

I have a recipe using these for fries that you can try. I also freeze them mashed.

Hope that helps,
Michelle
