This ham and cheddar breakfast burritos recipe is simple to prepare ahead and microwave in the morning for a hot grab and go breakfast in two minutes. Breakfast burritos are a great way to start your day, they are low in carbs and high in protein. Adding veggies instead of meat is a great boost toward your five a day. Diced the ham and grade the cheese first then set them aside. Preheat your frying pan as you break all the eggs. Spray it with cooking oil or coat with butter then cook the eggs. I like to break them into smallish pieces so they are easy to measure into the tortillas. While the eggs are cooking lay out all your tortillas on the table or counter so you can fill them evenly when your ready. Once the eggs are done throw them into a large bowl and add the ham, cheese and salt and pepper to taste. Be sure to stir them well to get the cheese distributed. I like these method better than layering in the cheese because when the cheese is against the tortilla and melts in the microwave I think it makes the tortilla too chewy as it cools. Spread the filling evenly amongst the tortillas, I use my 1/4 cup dry measuring cup so I keep them all even. Wrap them like a burrito, fold the sides in first and then turn up the bottom and roll to close.
