Old Fashioned Pound Cake

I found this recipe in an old church cookbook that my mom had. I’ve started making some of the recipes and this one is my favorite pound cake. We love it on Saturday mornings with coffee and cartoons.

Old Fashioned Pound Cake Recipe
1 cup butter
1 cup white sugar
1 cup confectioners’ sugar
4 egg yolks
1 teaspoon vanilla
1 teaspoon almond extract
3 cups sifted all purpose flour
2 teaspoons baking powder
¼ teaspoon sal t
1 cup milk
3 egg whites, beaten until stiff

Cream the butter. Sift the two sugars together and add, beating into the butter. Add the egg yolks one at a time, beating until smooth. Mix in the extracts. Sift together flour, baking powder and salt. Add the dry ingredients alternating with the milk to the creamed mixture. Fold in stiffly beaten egg whites. Bake in a greased and floured 10-inch tube pan at 350 degrees for 70-75 minutes.

We slice the pound cake and wrap each piece in plastic wrap then put them all in a freezer bag, they never last more than a month in my house! We like to let it thaw while the coffee brews and eat it cold.

Michelle's Reply: Sounds great I'll have to try this. And for those who aren't sure a tube pan is the round pan with a hole in the middle you usually make angel food cake in.
