Roasted Vegetables

Q: Is it possible to freeze a medley of roasted vegetables like squash, sweet potato, red peppers and red onion?

Yes, roasting veggies cooks them enough that you don't have to worry about the enzymes.

However, they won't be crispy when you reheat them.
