Is it possible to freeze strawberries successfully? If not, then will strawberry puree keep in the freezer?
Answer: Strawberries freeze great, they just don't thaw well. So, you can flash freeze them if you're going to use them in a few month. For longer storage, depending how you plan to use them of course, you can freeze them in a syrup to help prevent freezer burn.
They can be whole, sliced or diced before flash freezing and should be eaten partially thawed so they'll still a bit firm.
You can puree fresh or thawed berries and the puree freezes great as well.
