Ham and Cheddar Breakfast Burritos Recipe

This ham and cheddar breakfast burritos recipe is simple to prepare ahead and microwave in the morning for a hot grab and go breakfast in two minutes.

Breakfast burritos are a great way to start your day, they are low in carbs and high in protein.

Adding veggies instead of meat is a great boost toward your five a day.

Ham and Cheddar Breakfast Burritos Recipe
  • 12 tortillas
  • 10 eggs
  • 2 cups (500 ml) diced ham
  • 1 ½ cups (375 ml) grated cheddar cheese
  • Salt and pepper to taste
  • (cooking oil spray or butter)

Diced the ham and grade the cheese first then set them aside.

Preheat your frying pan as you break all the eggs.

Spray it with cooking oil or coat with butter then cook the eggs.

I like to break them into smallish pieces so they are easy to measure into the tortillas.

While the eggs are cooking lay out all your tortillas on the table or counter so you can fill them evenly when your ready.

Once the eggs are done throw them into a large bowl and add the ham, cheese and salt and pepper to taste.

Be sure to stir them well to get the cheese distributed.

I like these method better than layering in the cheese because when the cheese is against the tortilla and melts in the microwave I think it makes the tortilla too chewy as it cools.

Spread the filling evenly between all the tortillas, I use my 1/4 cup dry measuring cup so I keep them all even.

Wrap them like a burrito, fold the sides in first and then turn up the bottom and roll to close.

Try to make them long and skinny instead of short and fat, the longer skinnier ones reheat more evenly.

How Can I Make It Healthier?

Cut back on the cheese and add veggies or use veggies, like broccoli, in place of the ham.

What Other Variations Can I Try?
Use any cheese you want.

Try adding veggies.

Use a different meat, sausage and bacon are popular, or leave the meat out entirely.

Top with salsa or add some tobasco sauce as you cook the eggs.

How to Freeze Breakfast Burritos
Wrap burritos individually in plastic wrap to keep them from freezing together.

Place wrapped burritos into a freezer quality plastic bag removing as much air as possible.

Seal, label, date and add to your freezer inventory sheet.

Make sure you let the egg filling cool before you try to freeze them.

How to Reheat Breakfast Burritos
Microwave burritos from frozen for 1-2 minutes until heating through.

We’ve heated up two for burritos at a time for 3 minutes.

Use a plate or grab a napkin as you run out the door, these can drip.

You can also reheat them in the oven.

Preheat to 350 F/180 C and bake the burritos, from frozen, for 10-15 minutes or until heated through.
