Hi Tina, I haven't tried this so I did a bit of research for you.

First tomatoes are one those things that are iffy to freeze, being mostly water they'll lose a lot of texture when they thaw.

The best advice I've seen is to freeze thin slices unbreaded. Dip the frozen tomato slices in egg and breading then fry before they thaw.
